Potato pancakes with chicken meat

The day before i made too much potato puree for dinner and today i was afraid it may be spoilt if i keep this amount in the fridge too long. I already had the puree with fried onions, carrots and chicken meat. So, i decided to cook potato pancakes adding some flour and an egg.


For potato pancakes with chicken meat you'll need (i'm going to mention my own measurements)
potatos (enough to boil them in a middle size casserole)
2 carrots of middle size
2 onions of middle size
300-500 g of chicken meat
3 tsps of dried (or better - fresh, of course!) sliced parsley (optionally)
some tablespoons of flour
an egg
Clean the potatos and put them into a casserole with boiling water and some salt (leave some space on the top, you're going to add the rest products here later), boil them until they are ready. Make puree.
Boil chicken poured it with water just to cover the meat. Then cut the meat into as small pieces as you can.
Clean the vegetables, rub carrots on a grater and slice onions into half circles.
Heat a frying pan, add some vegetable oil and then - vegetables. Fry them on little fire under a cover mixing time after time for 10-15 minutes. Then add sliced chicken meat, make middle fire and fry together for 5-10 minutes. After that add chicken bouillon to the frying pan, salt to taste, mix together well and leave it stewing for about 5 minutes.
Mix potato puree and the pan contents together well. Add an egg  and parsley, mix again. Mix flour and the rest mixture forming "dough", so that it still sticks to the hands but thick enough.

Just like i told in the post with draniki recipe or carrot-outmeal pancakes recipe, using a tablespoon form pancakes and put them on heated frying pan with bit of vegetable oil and fry them on middle fire under a cover until they get a golden brown color on both sides. Keep in mind that pancakes enlarge while they are being cooked!
  

These pancakes smell really appetizing and have very delicious taste! Let them cool down a little bit (then   pancakes will slightly harden) and serve them as they are or with sour cream or whatever you like most!
In my opinion, these pancakes are good for any time of a day: breakfast, dinner, lunch - anywhen you like!
