Cold beet soup based on kefir

Summer is a great season of the year: it's warm (or even hot) weather, you can spend much time with kids outdoors - swim, play outdoor games, get a tan, etc, etc. But one more pleasant thing is we have fresh fruits and vegetables! We can buy it in the stores or grow in our gardens (much better!).
Sometimes it's too hot outdoors in the summer and we want something cool or cold for meal. I wanna show you how to cook cold soup tha holds much vitamins, it's really fantastic for a hot season!


For cold beet soup based on kefir you'll need
1 l of low-fat kefir
a beet of medium size including beet greens
a carrot of medium size
2 cucumbers of medium size
an onion of medium size
parsley, green onions, dill
sausages
2 eggs
cold boiled water

In this post I've already told that i used to cook soup in a big casserole (seems, it's 5 l). So, all my measurements are given for such one. If you wanna use another jar you just should know that all your incredients except kefir and water should fill the jar til its center. Not more.
So, let's get started!
First boil water, so it can cool down until you finish cooking.
Cook hard-boiled eggs.
Slice an onion, beet greens into small pieces, rub a carrot on a large grater. Add some vegie oil to the heated pan and fry the vegetables on small fire until an onion gets light golden color (it takes not much time, don't fry too long). You can skip the frying and use all the incredients as they are, untreated, but i prefer frying them cos in such soup there are enough fresh components and these fried vegies will make it little softer.
Rub cleaned cucumbers and a beet on a large grater and place into the casserole. Slice the sausages into cubes. For my casserole i needed such amount:

Cut eggs, parsley, dill and green onions into small pieces and place them into the casserole, too.
  

Now pour kefir out into the casserole and add water to fill it. Salt to the taste. And that's it!
This soup reminds me salad with water :)
If you don't like kefir you can skip adding it easily - just fill the casserole with cold boiled water and you'll have tasty soup as well! Then you may serve it with sour cream! If you use kefir you don't need it.
